Our Homemade Fish and Chips is a great healthy alternative to this classic dish! The fish is shallow fried and paired with roasted sweet potato and kale chips, this recipe is perfect for those who are looking to enjoy a guilt-free meal! Recipe by The Meat Club team, watch out video here.
- 250g The Meat Club New Zealand Wild Caught Snapper
- 1 sweet potato, cut into finger size
- 1 bunch of kale
- 1 tbsp yeast flakes
- 50g bread crumbs
- 50g parmesan cheese
- 10g lemon-infused salt
- Salt
- Pepper
- Olive oil
- Lemon for garnish
PREPARATION
- Add the sweet potato in a bowl, season with yeast flakes, salt & pepper with olive oil.
- Line a baking tray with paper & cook in a pre-heated oven until golden.
- Tear leaves off the kale stems, add to a bowl & again season with yeast flakes, salt & pepper with olive oil.
- Line a baking tray with paper & cook gently in a pre-heated oven until crispy.
- Remove snapper from tray. Mix bread crumbs with parmesan cheese & desired spices, then dip fillets into mix.
- Add oil to a pre-heated pan & pan fry fillets 2-3 mins each side. Turn then serve with kale & sweet potato chips.
