Gurnard Fish Fillets With Herb Dressing

Gurnard Fish is known to as a firm fish to hold its shape when cooked, which makes it perfect for a fish curry or fish and chips. In our Gurnard Fish Fillets With Herb Dressing, we let the lightly crisp crust of the fish combine nicely with and beautiful herb butter that creates a tasty white fish which hits the spot. Paired off with a clean green salad and roasted sweet potato chips to make a meal for the whole family. Inspired by Jul’s Kitchen blog over here.
INGREDIENTS
- 250g The Meat Club Gurnard Fish Fillet
- 1 cup whole spelt flour
- salt
- extra virgin olive oil
Dressing
- 1 tablespoon pickled capers
- 1 tablespoon black olives, stoned
- a few leaves of basil
- a few sprigs of thyme
- chives
- lemon juice
- extra virgin olive oil
PREPARATION

Flour the tub gurnard fillets with the flour and a pinch of salt.

Pour a few tablespoons of extra virgin olive oil in a frying pan and stir-fry the fish fillets for 2 minutes on each side, until they become golden and crispy. Place them in a dish lined with kitchen paper for a few minutes to remove the excess olive oil.

For the dressing, chop the herbs, olives and capers with the knife, then mix them with olive oil and 2 tablespoons of lemon juice.

Serve immediately drizzled with the herb dressing and salt to season.
