Curry Chicken Salad

This Curry Chicken Salad brings marries the warmth of curry spices with the lightness of a perfect salad. Have alone or with pitta for extra bites. According to author Riyana Rupani of Healthyish & Happy, this can be vegetarian as well, and paired with chickpeas!
INGREDIENTS
- 2 chicken breasts, cooked and shredded with a fork
- large celery stalk, diced
- ½ red onion, finely diced
- ¼ cup, chopped cilantro
- 3 tbsp raisins (alternatively cranberries, black raisins 0r chopped dates)
- 2 tbsp, chopped walnuts
- 1 tsp curry powder
- pinch cayenne (optional)
- 4 tbsp mayonnaise
- 2 tsp dijon mustard
- Salt & pepper to taste
PREPARATION
- In a large bowl mix all the dressing ingredients together
- In the same bowl, add the chopped salad ingredients and mix to coat with the dressing
- Serve with pitta bread, mixed greens, 1/2 a sweet potato or in lettuce cups
