Caribbean Jerk Chicken with Mango Avocado Salsa

This shocking simple and amazing Caribbean Jerk Chicken with Mango Avocado Salsa is easy to prepare, and tasty to boot. Using our very own Jerk Chicken Marinade, this dish can be ready in under 30 minutes.
INGREDIENTS
- 400g The Meat Club Cage free chicken thigh fillet
- Packet Caribbean Jerk Marinade
- Avocado, diced finely
- Mango cheek, diced finely
- Small red onion, diced finely
- 6 basil leaves, chopped finely
- 2 cups brown rice, cooked
- Salt and pepper
- Olive oil
PREPARATION
- In a bowl, marinate the Chicken Thigh Fillets with the Caribbean Jerk Marinade. Set aside.
- Meanwhile, mix the avocado, mango, red onion and basil in a small bowl.
- In a heated cast cast iron pan or pot, add a dash of oil and cook the chicken thoroughly.
- Serve the chicken with the rice, and a side of salsa.
