Spicy Grilled Beef Eye Fillet with Salsa

INGREDIENTS
- 400g The Meat Club Eye Fillet steak
- Olive oil
For the rub:
- ½ cup paprika
- ½ cup salt
- ¼ cup ground white pepper
- 1/3 cup onion powder
- 1/3 cup garlic powder
- 3 tbsp dried oregano
- 3 tbsp dried thyme
- 3 tbsp cracked black pepper
- 2 tbsp cayenne pepper
For the salsa:
- 1 large truss tomato
- ½ red onion
- 1/2 red bell pepper
- 1 clove garlic
- ½-1 red chilli depending on spice preference
- Sea salt and cracked pepper
- 1 tbsp olive oil
- 1 ½ tsp red wine vinegar
- 4 basil leaves
- Handful rocket leaves
PREPARATION
- In a large mixing bowl combine all the rub ingredients. Store in an airtight container.
- Rub 1 tsp of the spice rub into each steak with a little olive oil and allow to marinate for at least 4 hours.
- To make the salsa, mix together finely diced tomato, red onion, red bell pepper and crushed garlic in a small mixing bowl.
- Add finely chopped deseeded chilli, salt, pepper, oil, red wine vinegar and torn basil leaves mix together until salsa is combined. Add extra chilli if desired.
- Grill eye fillet steaks on the BBQ or in a grill pan for 4-6 minutes each side depending on thickness. Allow to rest for 5 minutes before slicing.
- Serve sliced on rocket leaves, top with salsa.
